Gymkitchen: Chicken Soup with Quinoa & Roasted Red Peppers Recipe

By using flavorful ingredients, like roasted red bell peppers and white bean hummus, this soup tastes like you slaved over it all afternoon– but really takes less than 20 minutes to throw together. This recipe is a great way to fit some quinoa into your diet. Quinoa is a protein-packed seed that is considered a “super food”. Here’s what you need:
(6 cups) roasted red bell peppers (2 bags in freezer section)
3/4 cup white bean hummus
2 cups chicken stock
4 cups water
2 cups cooked quinoa
2tbsp Olive Oil
1lb shredded chicken breast or tenders
dash pepper to taste
2 Tablespoons parsley, chopped (optional)


Place chicken in stock pot with chicken stock and water. Bring to boil, then simmer for 30 minutes (or skip this step & use store bought rotisserie chicken, but remove skin to help reduce the higher salt content).
Set 1 bag of red peppers aside.
Place the remaining red peppers in a blender along with the hummus, olive oil and chicken stock. Blend until smooth.
Transfer to a medium saucepan. Add the quinoa, chicken & warm. Season with pepper to taste.
Ladle the soup into bowls and garnish with the slices of red pepper and chopped parsley. Happy #gymkitchen eating!
